Kicked-Up Cornbread


My husband loves Jiffy corn muffin mixes. Quick, simple, easy to use and very consistent.

Last week when we made a big crock-pot of ham & beans for dinner, I took on the task of making the cornbread. What is ham & beans without cornbread?


I'm not sure if it was more out of curiosity or boredom, but I decided to add some extras to the cornbread batter.


I wasn't going to tell my family, I wanted to see if anyone would notice. At the last minute I chickened out and told on myself.


Holey moley, you would have thought I broke the law! They complained and carried on as if it was the end of the world. I messed with their cornbread and they were not happy...not happy at all.


Well, until they ate it!


It was delicious!!

I added:

* 1 1/2 tsp hot sauce

* 1/2 cup shredded colby-jack cheese

* 1 TBS southwestern seasoning

That added to the batter, then allowed to rest 10 minutes prior to baking as directed on the package - and viola! Kicked-Up Cornbread was an absolute success!

  1. I just found your blog through another blog and I love this post! My husband is a jiffy mix fan and I started making homemade cornbread because I got cornmeal for free with coupons. He complained and complained about all my different recipes until I got one that he said was almost as good as jiffy :) I can't wait to try these additions to throw them for a bigger loop :)

  2. I love the versatility of the corn muffin batters. We use it as a base for stuffed muffins for the kids' lunches. Right now, I have chili cornbread muffins in the fridge (drain the liquid from the leftover chili, add to batter, with a couple of handfuls of cheese, and bake!).

    1. Shannon that sounds very tasty - we will have to try that! Another blogger suggested cornbread muffins with her chili and the idea imprinted on my brain. Corn muffin mixes are definitely a staple item in our house!
