Open Crab Rangoon

Oh yes!  I am making good use of my mini-muffin pan these days!!
When I figured out how well it worked using the wonton wrapers for the Breakfast Bites - I had to try it with the Crab Rangoon recipe.  This turned out to be a very successful experiment!!


Ingredients:
  • 1 package cream cheese, softened
  • 1 small can crab meat, drained
  • 1 TBS minced garlic
  • 1 tsp soy sauce
  • 3-4 green onions, chopped with tops
  • 24 wonton wrappers
Directions:
  1. Preheat oven to 400 degrees F.
  2. Prepare mini-muffin pan with non-stick spray.
  3. Tuck one wonton wrapper into each mini-muffin well. 
  4. In a small mixing bowl:  combine cream cheese, drained crab meat, minced garlic, soy sauce, half of the chopped green onions.
  5. Spoon cream cheese mixture into wonton wrappers.
  6. Top each filled wrapper with additional chopped green onion.
  7. Bake at 400 degrees F for 10-15 minutes, depending on desire crispness.  (The longer they bake, the crispier - and browner - they will become.)

Taco Pizza



Ingredients:

1 refrigerated pizza dough roll
1 8 oz can tomato sauce
1/2 cup prepared salsa
1-1 1/2 lb. ground beef, browned & drained
3 TBS taco seasoning
8 oz shredded taco blend cheese
2 roma tomatoes, sliced
2 green tomatoes, chopped
**sliced black olives, as desired**
**sour cream, as desired**
**lettuce shreds, as desired**
**taco seasoning to sprinkle on top - just before baking...a little goes a long way!**


- Preheat oven to 425 degrees F
- Spread dough on to prepared baking pan, allow to rest while other ingredients are prepared
- Brown ground beef, drain and add 3 TBS taco seasoning and 1/8 cup of water to combine well
- Allow meat and seasoning to simmer briefly before removing from heat
- Cover pizza dough with tomato sauce and add salsa
- Cover sauce/salsa mix with seasoned ground beef
- Spread shredded cheese evenly over meat
- Top with sliced tomatoes, black olives, and green olives
- Sprinkle taco seasoning lightly over pizza before putting it into preheated oven
- Bake at 425 degrees F for 20-25 minutes

Serve with additional salsa, sour cream, and shredded lettuce. Another great add-on would be guacamole or diced avocado.

Kitty Feed

At our house - we are snackers...the grab and go kind are best. Breaking away from the tried and true cereal mix, this recipe is fun for the younger crowd and mom as well. Have fun making Kitty Feed for all your little kittens!

Kitty Feed:

2 cups Alpha Bits cereal
1 1/2 cups raisins
1 1/2 cups Mix-UP Goldfish crackers
1 cup candy corn





This is a snack your kids can make...or you can make with the help of your little ones.



I got a big bowl with a lid, and added the ingredients separately to show my kids how much of each ingredient we were putting in actually looked like in comparison to the others.
Time to mix and eat.
