Twice Baked Potato Casserole


Ingredients:

  • 4 potatoes, baked and mashed
  • 1/2 cup cream cheese
  • 1/2 cup sour cream
  • 1/4 medium onion, chopped
  • 1/2 cup skim milk
  • bacon crumbles
  • 1/2 cup shredded cheddar cheese
  • salt & pepper as desired
Directions:
  1. Preheat oven to 350 degrees F.
  2. Prepare baking dish with non-stick spray.
  3. In a mixing bowl combine: mashed potatoes, cream cheese, sour cream, onion, and skim milk.
  4. Top with shredded cheese and bacon crumbles.
  5. Cover dish with foil and bake for 35-40 minutes.
Hint: Whenever we make boiled or mashed potatoes for a meal, I try to make extra so we will have leftovers. In the back of my mind I always plan on making potato pancakes with the leftovers...but I usually find another way to use them up before we ever get around to making the potato pancakes. This casserole is a great example! I used leftover boiled potatoes to make this dish for my husband and me for lunch. His favorite part? No potato skins :) Enjoy!!

Chicken Pot Pie with Stuffing

We started out with 1 whole chicken that we roasted in the crock-pot with seasoning. This is meal #3 we were able to cook from that 1 chicken:

Ingredients:

2 1/2-3 cups cooked chicken, shredded or chopped
1 (29 oz) can home style mixed vegetables, drained
1 (10 3/4 oz) can cheddar cheese soup
1 onion soup mix packet
1 cup shredded cheddar blend cheese
1 (6 oz) package stuffing, prepared

- Combine cooked chicken, mixed vegetables, cheddar cheese soup, onion soup mix, and shredded cheese.

- Turn into freezer safe/oven safe casserole dish sprayed with cooking spray.

- Top with prepared stuffing mix.




- Cook at 350 degrees F 30-35 minutes, or until heated completely through.

- OR -

- Cover and freeze for up to 3 months before serving. In order to reheat, thaw casserole in refrigerate prior to cooking. *Be careful not to place a frozen glass dish into a heated oven to avoid breakage.*





Chicken Enchiladas

We started with 1 whole chicken. Roasted in the crock-pot with only seasoning. From that 1 whole chicken...we got 3 different meals. This is meal #2:

Ingredients:

2 1/2-3 cups cooked chicken, shredded or chopped
1 cup sour cream
1 (4.5 oz) can chopped green chilies
1 cup shredded cheddar blend cheese
1 cup salsa
8-10 fajita size flour tortillas
1 (10 oz) can green enchilada sauce
1/2 cup shredded cheddar blend cheese
sliced black olives for garnish**
2 chopped green onions for garnish**




- Begin by combining the chicken, 1 cup of shredded cheese, sour cream, green chilies, and salsa.




- Spray freezer safe/oven safe casserole dish with cooking spray.
- Spoon chicken mixture into flour tortillas, roll and place in casserole dish seam side down.




- Cover filled tortillas with enchilada sauce, 1/2 cup shredded cheese, and black olives and green onions if desired.

- Bake at 350 degrees F for 40-45 minutes or until heated through.

- OR -

- Cover and freeze for up to 3 months before reheating and serving. To reheat and serve, allow prepared dish to thaw in refrigerator prior to cooking. *Placing a frozen glass dish in a preheated oven may cause glass to break.**

Hot Turkey Salad Casserole

Another one of Mom's recipes... Besides having leftover turkey sandwiches with cranberry sauce or mashed potato pancakes or enjoying a breakfast feast of leftover ham and yeast rolls - this turkey casserole recipe was something to look forward to every holiday. This recipe is exactly why we buy an extra big turkey - we are making sure we have leftovers!!

Ingredients:

1/4 cup minced onion
2/3 cup chopped green peppers
2 stalks chopped celery
1/4 cup butter or margarine
3-4 cups cooked turkey, cut into chunks
1 TBS lemon juice
2 tsp salt
1 cup mayonnaise
1/2-1 cup slivered toasted almonds *optional*
1/2 cup shredded Swiss cheese
1 1/2 - 2 cups crushed potato chips


- In a deep skillet saute onion, peppers, and celery in butter until tender...do not brown.
- Stir in turkey, lemon juice, and salt.
- Cover skillet and place over low heat until ingredients are hot.
- Before serving, remove from heat and lightly stir in mayonnaise and nuts.
- Sprinkle with Swiss cheese and potato chips.
- Heat under broiler until top is golden brown, 5-10 minutes depending on your oven.

Getting Rid of the Bananas



Finished off the bananas today. Took the banana-nut muffin mix and made made pancakes, topping with extra crunchy peanut-butter and sliced bananas. After the boys were safely to school - we used the leftover banana and made banana cream pudding mixed with a handful of mini-chocolate chip morsels.

FYI: Did you know that if you are counting carbs...1 regular size banana counts as 2 carb servings?? And if PMS or menopause are a problem, the potassium in those bananas might help to take the edge off muscle cramps and spasms.
