Ingredients:
- wonton wrappers (24)
- 4 eggs
- 1/2 cup diced ham
- 1/2 cup half-and-half
- 1/2 cup shredded cheese
- 2 green onions, with tops
- salt & pepper to taste
- salsa *
- Preheat oven to 400 degrees F.
- In a small mixing bowl mix eggs, ham, half-and-half, and shredded cheese.
- Prepare mini-muffin pan with cooking spray.
- Put one wonton wrapper in each muffin well.
- Fill wonton wrapper with egg mixture - about 2/3 full.
- Top with sliced green onions and salt and pepper if desired.
- Bake at 400 degrees F for 8-10 minutes.
- Allow to cool before serving, top with salsa if desired.
