Cinnamon & Peach Coffeecake


I should have taken a picture before we tasted this - but I didn't.

It was good! Really, really good!!

Ingredients:

1 can juice packed sliced peaches
1 package Cinnamon Streusel muffin mix
1 egg
*water*

1 - Preheat oven to 400 degrees F. Prepare baking dish, recommended dish is a 8-inch square or 9-inch round...so of course we used a bundt pan.

2 - Drain peaches, reserving juice. Add enough water to reserved juice to measure 3/4 cup of liquid.

3 - Combine muffin mix, egg, and 3/4 cup juice-water mixture in a mixing bowl until just blended. Gently add peaches. Pour batter into prepared baking dish.

4 - Top batter in baking dish with streusel topping from muffin mix.

5 - Bake at 400 degrees F for 35 to 40 minutes in the bundt pan, 25-30 minutes in the round pan, or until a fork inserted into the cake comes out clean.

6 - Excellent served warm.

7 - Amazing served cooled.

Pork Chop & Stuffing (crock-pot)

INGREDIENTS:

1 small pork chop per person being served
1 box stuffing mix
1 1/4 cup water
1 egg (slightly beaten)
1 small can, chopped green chilies
2 TBS chicken bouillon granules
1/2 tsp Rosemary-Thyme seasoning blend

* Combine stuffing mix, water, egg, green chilies, chicken bouillon and Rosemary-Thyme seasoning in bottom of crock-pot. Mix well.
* Lay pork chops on top of stuffing mixture. Season with salt and pepper (if desired).
* Cook on low 6-7 hours, or high 4 hours.

HINT: Adjust the amount of water if you would like the stuffing to be more moist or more dry.

Ground Beef Goulash

Ingredients:


3 cups dry macaroni, cooked & drained
1 1/2 lbs ground beef, browned & drained
2 cans stewed tomatoes (diced tomatoes...whatever is in the cabinet)


* Brown the ground beef, drain.

* Add tomatoes to ground beef and simmer on low while macaroni cooks.

* Bring large pot of water with 1 tsp salt and 1 TBS olive oil to a boil, add macaroni noodles and cook for 8 minutes.

* Drain macaroni, combine with ground beef and tomatoes in large pot.



My 14 year old cooked this for our dinner on Thursday night. He did an excellent job!! I know it is not the traditional Goulash recipe - but this was what my mom cooked and called Goulash in our house growing up. Instead of tomatoes from the store, we always used the quart sized home canned tomatoes from my grandmother's garden. A simple, yet very satisfying dish that reminds me of the good times I had with my mom growing up. Definitely, definitely comfort food!
