Fish Tacos



Fish Tacos:

I keep seeing recipes for fish tacos...Foodie shows featuring fish tacos...I think I've even seen a couple in my dreams! Tonight fish & chips was the dinner menu...so I twisted it a bit and made this super yummy, super filling, SUPER easy Fish Tacos. Go ahead, try some!!

Adjust quantities needed for the crowd size you are feeding. (I made myself 2 tacos...and still have 1 left over.)

-fajita size flour tortillas, slightly warmed
-sliced deli white American cheese
-baked crunchy battered fish fillets
-prepared salad mix - (iceberg lettuce with carrots)
-sliced black olives
-guacamole

This would be a great dish to serve on a taco bar, that way every one can pick the toppings or ingredients they prefer.

No-Bake Cherry Pie



Ingredients:

1 21 oz can cherry pie filling
1 13 1/2 oz carton whipped topping
1 14 oz can condensed milk
1 8 oz can crushed pineapple
1 1/2 cup mini marshmallows
1/2 cup chopped nuts
1/2 cup coconut
2 deep dish pie shells
2 maraschino cherries
**your choice of sprinkles - graham cracker/sugar combo used here**





- Preheat oven to 375 degrees
- Prick pie crusts with fork
- Bake for 10-12 minutes (or until desired doneness)




- In large mixing bowl...combine cherry pie filling, crushed pineapple, condensed milk, marshmallows, coconut, nuts, whipped topping



- Fill cooled pie crusts with pie filling
- Top with single maraschino cherry and sprinkles, if desired
- Chill in refrigerator until time to serve




Bulgogi




Ingredients:

3 tablespoons soy sauce
1 tablespoon sesame oil
1 TBS garlic, minced
1 teaspoon white sugar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon Accent seasoning (optional)
1 pound beef top sirloin, thinly sliced
1 carrot, julienned
1 green onion, chopped
1/2 yellow onion, chopped





- In a large resealable plastic bag, combine soy sauce, sesame oil, garlic, sugar, salt, black pepper, and Accent.




- Place beef, carrots, and onions in the bag; seal, and shake to coat the vegetables and beef with the sauce.

- Refrigerate for at least 4-6 hours.




- Cook marinaded meat and vegetables over medium heat in a deep skillet or grill pan until meat is fully cooked.




- Serve with rice or noodles

Spinach & Ham Stromboli



Ingredients:

1 refrigerated pizza crust (roll form)
1/2 cup fresh baby spinach
3-4 slices provolone cheese
4-6 oz sliced deli ham
3/4-1 cup of shredded mozzarella cheese
1/4 cup sliced red onion
**Italian seasoning blend**


* Unroll pizza crust unto baking pan or stone

* Put baby spinach leaves down the center of the dough, lengthwise

* Top spinach leaves with provolone slices

* Top provolone with ham slices

* Top ham with shredded mozzarella

* Top mozzarella with red onion slices

* Lightly sprinkle with Italian seasoning blend

* Bring sides of pizza dough over the middle (fillings) and seal in the middle, by overlapping or squeezing dough together...if desired turn stuffed dough seam side down

* Sprinkle outer side of dough with additional Italian seasoning if desired

* Bake in preheated 350 degree F oven for 35-40 minutes

* Allow to rest about 5 minutes after removing from oven....slice and serve

Triple Berry Waffles & Pork Sausage & Fresh Fruit

Breakfast is NOT my favorite meal to prepare. Unless we're talking coffee...but coffee isn't sufficient (or so I'm told).

So I occasionally go the easy route and utilize a muffin mix for a waffle mix.

This is a great way to start the day!

The plus for our family is that no syrup is needed when using the muffin mixes so the carb count is greatly reduced...while insuring that enough carbs are available to fuel up until lunchtime. This is very important!



Here's what we did -

Combine:

1 triple berry muffin mix
1 Tbs flour (I would add a lil more)
1 egg
2 Tbs oil
2/3 cup water (I would decrease to 1/2 next time)


*Mix ingredients with a wisk.
*Allow to rest for approximately 5 minutes.
*Cook in waffle press - YUMMMM!

We added a side of fresh fruit and pork sausage. Include a glass of cold low-fat milk and the day is off to a wonderful start!!
